About this recipe

A simple stovetop salmon dinner cooks with leafy greens, lemon, and herbs in one pan, with gentle steaming for tender fish.

Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves, thinly sliced
  • ¼ cup low-sodium vegetable broth or water
  • 5 ounces baby spinach
  • 2 skinless salmon fillets, about 5 ounces each
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon chopped fresh dill

Instructions

  1. Heat the olive oil in a wide skillet over medium heat. Add the garlic and cook for about 30 seconds, stirring, until fragrant.
  2. Pour in the broth or water. Add the spinach and turn it with tongs until it begins to wilt.
  3. Set the salmon fillets on top of the greens. Season with the salt and pepper.
  4. Cover the skillet and cook over medium-low heat for 6–10 minutes, depending on the thickness of the fillets.
  5. Check the thickest part of the salmon for doneness. If needed, cover and cook for another minute or two.
  6. Spoon lemon juice over the salmon and scatter the parsley and dill over the pan.
  7. Serve the salmon with the greens and pan juices.
